Deep Fried Sweet and Sour Fish Recipe

Ingredients :

Sauce

Fish fillet (flounder or sole)

Cornflour

Oil for deep-frying

 

 

Sugar

Soy sauce

Vinegar

Rice wine or sherry

Cornflour

Lard

Ginger root, finely chopped

Spring onion (scallion), finely chopped

Method :
  • Cut the fish into small, thin slices and coat them with cornflour.

  • Heat up the oil in a wok or deep-fryer over a high heat until smoking.

  • Then reduce the heat and use a pair of chopsticks to put the fish slices into the oil and deep-fry them for about 2 minutes or until golden.

  • Remove and drain.

  • Heat up the lard in a hot wok or pan.

  • Meanwhile, mix the sugar, soy sauce, vinegar, wine or sherry and cornflour in a bowl.

  • Toss the finely chopped ginger root and onion into the hot lard, then pour in the sauce mixture and stir until thickened.

  • Now add the fish slices, blend well so that each piece is coated with the sauce.

  • Serve hot.
