Ingredients :

Seasoning B (combined)

Thickening (combined)

Ingredients C

100 ml

Large shrimp

Sugar

Chinese cooking wine

 

 

Young ginger, shredded

Dried scallop, soaked and shredded

Tong kwai

Tong sum, cut into 4 cm slices

Pak kei

Kei chi

Water

 

 

Sugar

Light soy sauce

Oyster sauce

Sesame oil

Pepper

Water

Salt to taste

 

Cornflour

Water

 

 

Chinese cooking wine

Method :
  • Trim and de-vein the shrimp and set aside.

  • Combine ingredients A in a saucepan.

  • Bring to a boil, then simmer for 25 minutes until stock turns fragrant.

  • Marinate shrimps with sugar and 2 tablespoons cooking wine for 15 minutes.

  • Steam shrimp until just cooked.

  • Heat up the herbal stock, add in seasoning B and ingredients  C and bring to a simmering boil.

  • Add thickening ingredients.

  • Pour cooked soup over the shrimps.

  • Serve immediately while hot.
