Fried Pork Curry Recipe

Ingredients :

Roughly chopped onion

Crushed garlic

Finely chopped fresh ginger

Peanut oil

Sesame oil

Chili powder

Ground turmeric

Boneless pork, cut into 3 cm cubes

Vinegar

Water or stock

Fresh coriander leaves

Method :
  • Place the onion, garlic and ginger in a food processor and process until a thick rough paste is formed.

  • Heat the peanut oil and sesame oil in a large pan; add the paste and cook it over medium heat for about 15 minutes until it becomes a golden brown color and has oil around the edges.

  • Add the chili powder, turmeric and pork and stir well for a few minutes until the pork is well coated with the mixture.

  • Add the vinegar and water, cover and simmer gently for 1 1/2 hours or until the meat is tender.

  • If necessary, reduce the liquid by removing the lid and allowing the sauce to evaporate.

  • Season with salt to taste and scatter over the coriander.

  • Serve with rice.
