Cashew Nut Curry Recipe

Ingredients :


3 cups

Padanus leaf

Coconut milk

Onion, chopped

Grated fresh ginger

Ground turmeric

Fresh galangal

Green chilies, seeded and finely chopped

Curry leaves

Cinnamon stick

Raw cashew nuts

Chopped fresh coriander leaves

Method :
  • Shred the padanus leaf lengthways into about 3 sections, and tie into a large knot.

  • Combine the coconut milk, onion, ginger, turmeric, galangal, chili, curry leaves. cinnamon stick and padanus leaf in a pan and bring to the boil.

  • Reduce the heat and simmer for 20 minutes.

  • Add the cashew nuts and cook for a further 30 minutes or until the nuts are tender.

  • Remove the curry from the heat, discard the galangal, cinnamon stick and padanus leaf.

  • Sprinkle over the coriander and serve with rice and a couple of other dishes.
