Lentils with Spices Recipe

Ingredients :

Medium onions, finely sliced

Small red chilies, finely chopped

Dried shrimp

Ground turmeric

Red lentils

Curry leaves

Coconut milk

Vegetable stock

Cinnamon stick

Lemon grass (white part only)

Method :
  • Heat the oil in a medium pan. Add the onion and cook over medium heat for 10 minutes, or until the onion is deep golden brown.

  • Remove half the onion and set aside to use as a garnish.

  • Add the chili, dried shrimp and turmeric, and cook for 2 minutes.

  • Stir in the lentils, curry leaves, coconut milk, stock, cinnamon stick and lemon grass.

  • Bring to the boil, reduce heat and simmer, uncovered, for 45 minutes.

  • Remove the cinnamon stick and lemon grass and garnish with the reserved onion.

  • Serve.
