Sri Lankan Vegetable Curry Recipe

Garlic, crushed

Green chilies, seeded and very finely chopped

Ground turmeric

Fenugreek seeds

Medium onion, chopped

Curry leaves

Cinnamon stick

Coconut milk

Method :
  • Peel the pumpkin and cut into 2 cm cubes. Peel the potato and cut into 2 cm cubes.

  • Trim the stems from the okra.

  • Heat the oil in a large heavy-based pan, add the garlic, chili, turmeric, fenugreek seeds and onion.

  • Cook over medium heat for 5 minutes or until the onion is soft.

  • Add the pumpkin, potato, okra, curry leaves, cinnamon stick and coconut milk.

  • Bring to the boil, reduce heat and simmer, uncovered, for 25 to 30 minutes or until the vegetables are tender.

  • Serve with rice.
