Stir-Fried Green Beans Recipe

Ingredients :

Green beans or snow peas

Fresh bean sprouts

Oil

Salt

Sugar

Method :
  • Wash and trim the beans, shred if necessary.

  • Wash and rinse the bean sprouts in a bowl of cold water and discard the husks and other bits and pieces that float to the surface.

  • Remove the roots too if possible

  • Heat the oil in a hot wok or large frying pan and when it starts to smoke, swirl the wok so that its surface is well greased.

  • Add the green beans first, stirring to make sure that each piece is well covered with oil, then the bean sprouts and stir-fry for 30 seconds.

  • Add the salt and sugar.

  • Continue stirring for about 1 minute at the most.

  • Overcooking will turn both the green beans and bean sprouts into a soggy mass.

  • Serve hot.
